This is a cross between a cake and a bread, as it does not contain any fat or eggs and is not very sweet, so makes a nice change and is so simple to make.
400g self raising flour
(if you don't have self raising flour then I use 400g plain flour, replacing two tablespoons with two tablespoons of cornflour, making sure you end up with 400g of flour) plus 3 tsps baking powder
1 tsp salt
50g brown sugar
60g chopped walnuts
2 tbsps golden syrup
300ml (1/2 pt) milk
Place all the dried ingredients in a mixing bowl and combine well.
Add the golden syrup and milk and mix into the dry ingredients. If the mix seems a bit stiff add a spot more milk.
Transfer to a lined 20.5 cm cake tin.
Bake in a preheat oven at 180c for 45 mins.
To check the cake is cooked use a skewer or knife to poke into the cake if it comes out clean then the cake is cooked, if not put back in the oven for a few more minutes.
Well cool enough to handle transfer the cake to a wire cooling tray to allow to cool completely.
