Recipe: Tarhana Soup

Ingredients - (serves 2)

2-3tbsps Tarhana Curds -
1/2 cup water
2tbsp tomato paste
2 to 3 cups of chicken, beef or vegetable stock
1tsp butter

Method -

Add the Tarhana curds and water to a saucepan, stir together and leave for an hour or so for the curds to start to dissolve.

After about an hour add the rest of the ingredients, cook over a medium-low heat, stirring constantly, until the soup is hot, add a little water if the soup is too thick and season with salt and pepper.

The soup can be garnished with either a sprinkling of crushed dried red pepper, or crumbled cheese or chopped fresh mint.
