Recipe: Breaded Parmesan Chicken with Potato, Carrot Mash

Ingredients  - (serves 2) This makes a simple, quick supper.


2 small boneless chicken portions, or 1 large portion sliced into two, and then beaten with a meat hammer or rolling pin until double in size and half as thin
1/4 cup breadcrumbs
1 tbsp Parmesan cheese
1 egg, beaten
3 medium potatoes, peeled and chopped
2 medium carrots, peeled and sliced

Method  -

Put the potatoes and carrots in a saucepan and boil for about 20 minutes until tender.  Once cooked drain, mash and season with salt, pepper and a knob of butter.  Keep warm.

On a small plate mix together the breadcrumbs and Parmesan cheese.  Tip the beaten egg onto a second plate.

The dip the chicken portions first in the beaten egg and then in the breadcrumb and Parmesan mix, making sure the chicken has a good covering on all sides.

Add a tsp of olive oil to a large frying pan and fry the chicken over a high heat for 2 to 3 minutes per side, until tender.
