Recipe: Roasted Potato with Mushrooms and Köfte

Ingredients - (serves 2)  This makes a good one pot snack or it can be topped with a fried egg or a portion of baked beans to make more of a meal.


3 medium potatoes, peeled and cut into bite sized chunks
handful of mushrooms cut into quarters
2 portions of köfte nuggets, around 10 to 15 per person (if you don't have köfte you can use chunks of salami or any other sausage
olive oil
salt and pepper
chervil or you can use any herb of your choice

Method -

Heat the oven to 220c.

Toss the chunked potatoes in some olive oil, salt, pepper and chervil.  Transfer to a roasting tray and put in the oven for 30 minutes, take out the tray and shake half way through to prevent the potatoes from sticking.

Toss the mushroom quarters in some olive oil, salt, pepper and chervil and add to the potatoes along with the köfte.  Return to the oven for a further 15 minutes.
