Recipe: Cauliflower Cheese Supper

Ingredients - (serves 2 as a meal or 4 as a vegetable accompaniment)

1 medium cauliflower, stalk removed and separated into florets
olive oil
salt and pepper
1 onion, peeled and sliced
knob of butter
2 inch piece of pepperoni, cut into small chunks
1 packet Four Cheese Sauce Mix or any other cheese sauce
2 tbsps breadcrumbs
2 tbsps Parmesan Cheese

Method -

In a large bowl, toss the cauliflower florets in some olive oil, salt and pepper until the florets have a light coating of oil.

Transfer to a shallow oven-proof dish just large enough that the cauliflower is in a single layer.

Place in a preheated oven at 200c for around 30 minutes until the floret stems are starting to feel tender when tested with a knife.

While the cauliflower is roasting gently fry the sliced onion in a little butter until the onion is soft and a golden brown in colour.  Take off the heat and put to one side.

Make up the cheese sauce packet mix or make up your own sauce and put to one side.

When the cauliflower has roasted take out of the oven.

Sprinkle over the pepperoni chunks and fried onions.  Pour over the cheese sauce.  Mix together the breadcrumbs and Parmesan Cheese and sprinkle over the top of the sauce.

Return the dish to the oven and bake until the breadcrumbs and Parmesan Cheese has created a golden crust.
