Recipe: Orange Marmalade Cake
3 eggs (the eggs I used weighed 176g in their shells)
176g soft margarine
2 tsps baking powder
Replace 1tbsp of the flour with 1 tbsp cornflour
4 tbsps orange marmalade
Grease and line the bottom of a 7" (18cm) deep tin. I used a 7" X 9" (18 x 23cm) tin in which case you will need to increase the number of eggs to 4 and increase the other ingredients accordingly.
Preheat the oven to 170c.
In a mixer, mix together the flour, baking powder, sugar, margarine and eggs until creamy.
Add the orange marmalade and lightly combine.
Pour into the greased tin and cook for 25 to 30 minutes, until the cake is nicely browned and a skewer comes out clean when inserted into the centre of the cake.
When cool remove from the tin and cool on a wire rack.
When cold decorate with some thin slices of orange.
