Recipe: Bacon, Cheese and Potato Pie
8 medium potatoes, peeled and cut into quarters
1/2 medium onion, peeled and chopped
1/2 cup diced bacon or spicy sausage
2 tsp olive oil
1 tsp butter or marg
1/2 cup grated cheese plus little extra
salt and pepper
Boil the potatoes in some salted water until the potatoes are tender. Drain then mash with the butter or marg.
In a frying pan start to fry the bacon or spicy sausage in the olive oil. Once the oil has been infused with the bacon or spicy sausage add the chopped onion.
Continue frying the onion and bacon or spicy sausage until they are browned and all the juices have been absorbed into the onion.
Add the 1/2 cup grated cheese to the mashed potatoes and mix together well.
Then add the bacon and onion mix and mix in.
Season with salt and pepper.
Transfer to an ovenproof dish and sprinkle with a little more grated cheese.
Put in a pre-heated oven at 200c for around 20 mins until the pie is nicely browned on top.
