Recipe: Crustless Chard and Red Onion Quiche
1 tsp olive oil
1 red onion, peeled and sliced
2 cloves garlic, peeled and chopped
2 1/2 cups grated cheese, mixed cheeses would be good
1 cup milk
salt and pepper
Preheat oven to 200c.
Add the onion, garlic and chard to the olive oil in a frying pan and saute until the chard stem is soft, but do not over cook too much, so that the leaves do not go too soft.
Whisk together the milk and eggs in a large bowl and mix in the cheese. Season with salt and pepper.
Mix in the onion and chard mix.
Pour into a pie dish greased with butter or sprayed with non-stick cooking spray.
Bake for 35-45 minutes or until golden brown and no liquid seeps out when poked with a knife.
