Recipe: Chilli Con Carne
200g minced beef
1/2 large onion, peeled and chopped
2 cloves garlic, peeled and chopped
1 red pepper, de-seeded and chopped
4 mushrooms, chopped
2"/5cm piece spicy sausage, chopped
1 x 400g tin kidney beans, drained
1 x 400g tin tomatoes
1 cup beef stock
1/2 tbsp chilli flakes
1/2 tsp garlic salt
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp allspice
1/2 tsp smokey paprika
salt and pepper
Fry the minced beef in a large pan, until it starts to brown.
Add the onion, garlic and red pepper and fry for a minute of two until the vegetables start to soften.
Add in the remaining ingredients and simmer until the sauce thickens and the meat is cooked, around 45 mins.
You may need to add a little more hot water to the chilli if it becomes to thick.
Serve on a bed of boiled rice.
I also serve this with some Nachos - spread some Doritos on a plate, sprinkle with grated cheese and grill until the cheese melts and starts to bubble.
