100g strong cheese or 125g if milder cheese
Put the flour, butter and cheese into a food processor and put on pulse setting until the mix looks like breadcrumbs. Then put onto mix until the mixture binds together and becomes a smooth dough. This takes a few minutes so don't worry if it does not look like it is going to combine, it will.
Tip out onto a lightly floured surface and shape the dough into a long sausage shape about 1" or 5cm round, cover with cling film and put in the fridge for about 30 minutes.
Heat the oven to 190c and line two baking trays with greaseproof paper.
Remove the dough from the fridge, uncover it and cut into thin slices. Use your fingers to lightly shape the biscuits until you get the shape and thickness you want.
Place on the baking sheets. Beat the egg and water together and use to brush each biscuit.
Sprinkle the top of each biscuit with either or some of each of the seeds and paprika.
Pop in the oven for around 4 minutes until the biscuits are golden brown.
Transfer to a wire rack and allow to cool.
Store in an airtight container.
