Recipe: Köfte with Plum Sauce Onion Gravy
2 portions of köfte (6 pieces each), or you can use sausages or meatballs
1 small onion, peeled and thinly sliced
2 tbsps plum sauce
2 large potatoes, peeled and cut into pieces
1 cup pumpkin, peeled and cut into pieces
Pop the potatoes and pumpkin in a saucepan of water with a pinch of salt and boil for 20 mins until soft.
Meanwhile place the köfte in a roasting pan and place in a preheated oven at 200c for 15 mins.
Place the sliced onion in the gravy in a saucepan and bring to the boil and then simmer gently.
One the potatoes and pumpkin is cooked drain and mash with a splash of milk and a nob of butter and season with salt and pepper. Keep warm.
One the onion in the gravy has softened, add the plum sauce and mix well.
Remove the köfte from the oven and pour over the gravy.
Serve with the potato and pumpkin mash.
