Recipe: Chicken Tika Masala
1 large potato, peeled and cut into small bit sized pieces
1 large onion, peeled and cut into bit sized pieces
1 large chicken portion, cut into bit sized pieces
handful mushrooms, cut into bit sized pieces
1 packet coconut milk, made up as per instructions
3 heaped tsps of tika masala powder
peanut oil or olive oil
In a large frying pan or wok, fry the potato in some peanut or sunflower oil until browned on all sides.
Transfer to a plate and put to one side.
Add a little more oil to the pan and fry the onion and chicken, until the chicken is just cooked.
Put the potato and mushrooms back into the pan with the chicken and onion.
Add the 3 heaped tsps of tika masala powder to the coconut and milk and then pour over the chicken and vegetables. Mix together well.
Bring to the boil and then simmer for around 10 to 15 mins until the sauce has reduced and thickened.
Serve with boiled rice.
