Recipe: Tuna Melts
2 bread baps or pitta breads
1 tin tuna, roughly drained, leave a little of the oil
1 tbsp finely chopped onion
1 tbsp finely chopped red pepper
1 tbsp finely chopped parsley
6 black olives, pip removed and chopped
cup of grated cheese
salt and pepper
Cut the baps or pitta bread in half, place back together and put on a lined baking tray upside down.
In a bowl mix together the tuna, onion, red pepper, parsley, black olives. Season with salt and pepper.
If you want the mix a little more wet add a little more olive oil or a drop of tomato ketchup.
Grill the underside of the bread until it feels crispy.
Turn them over and lay the tops separately on the tray.
Pile half of the tuna mix onto each bottom half of the bread and top with half of the grated cheese
Put back under the grill until the cheese has melted and is bubbling.
Pop the lids back on and serve.
