Recipe: Soya Sauce Chicken with Potato Wedges
6 small potatoes, washed then cut into wedges
2 tbsps olive oil
salt and pepper
1 chicken portion, trimmed and cut into bite sized pieces
1 red pepper, de-seeded and cut into chunks
1 onion, peeled and cut into chunks
1 tbsp olive oil
1 tbsp chopped parsley
Put the 2 tbsps olive oil in a medium sized pan and heat in a hot oven 200c until the oil is hot.
Carefully put the potato wedges in the pan, season with salt and pepper and bake for around 30 to 40 mins. Shake the pan a few times during cooking to stop the wedges from sticking.
In a frying pan fry the chicken in 1 tbsp olive oil until they start to brown.
Add the red pepper and onion and fry until they start to soften.
Add some soya sauce, as much or as little as you prefer, I put in about 1 tbsp.
Turn down the heat and allow to cook for a few minutes.
Just before serving season with salt and pepper and sprinkle over the chopped parsley.
