Recipe: Oyster Mushrooms with Red Peppers and Haloumi Cheese

Ingredients - serves 2

1 pack oyster mushrooms, 250g (you may want to remove the stalks of the mushrooms as they can be tough)
3 red peppers, de-seeded and cut in half lengthways
1 pack haloumi cheese, sliced
olive oil
salt and pepper

Method - 

In one frying pan add a little olive oil and start to fry the red peppers on a high heat, until soft.  They do spit quite a bit so it best to cover them with a lid.

In the same pan or another depending, on the size, add the oyster mushrooms and fry quickly until browned on both sides.

In another pan add the haloumi and dry fry on both sides until brown.

To serve, place the peppers on two plates, pile with the haloumi and then the oyster mushrooms on top.

Season with salt and pepper and drizzle over some olive oil or balsamic vinegar.

Serve with crusty bread.
