Ingredients - serves 2
2 red peppers, cut in half lengthways and de-seeded
2 green peppers, cut in half lengthways and de-seeded
2 tomatoes, thinly sliced
handful fresh basil leaves
white cheese, thinly sliced
ground black pepper
Layer the sliced and de-seeded peppers in a dish, alternating red and green.
Sprinkle with olive oil, cover with foil and bake in a pre-heated oven at 200c for 20 mins, until the peppers start to soften.
Cover the peppers with a layer of the thinly sliced tomatoes, followed by a sprinkling of basil leaves and a layer of cheese.
Drizzle over some more olive oil and sprinkle with black pepper.
Put under a hot grill and grill until the cheese has melted and browned on top.
I like to serve this with chicken marinated in balsamic vinegar, and grilled.
