Recipe: Honey, Mustard Dressing

Ingredients - 


3 tbsps apple vinegar
3 tbsps honey
6 tbsps mayonnaise
1 tbsp Dijon mustard
1 tbsp onion, finely chopped
1 1/2 tbsps parsley, finely chopped
pinch of salt
3/4 cup olive oil

Method -

In a small saucepan add the vinegar and honey and heat gently to dissolve the honey.

Remove from the heat, transfer to a medium sized bowl and leave to cool.

Once cooled add the mayonnaise, Dijon mustard, salt and whisk together.

Mix in the onion and parsley.

Then drizzle in the olive oil, mixing well.

The dressing can be kept in a screw top jar in the fridge until required.
