Recipe: Garlic, Cucumber and Yoghurt Dip (Tzatziki)

Ingredients - serves 2 to 4
(My Husband likes this dip so much that I hadn't realised until after I had taken the photo that he had already dipped a crisp!)

1 cup Greek style Yoghurt
1 small cucumber, peeled and grated
1 clove of garlic, peeled and finely chopped
pinch salt
1 tbsp olive oil
1/2 tsp vinegar

Method -

The grated cucumber should be squeezed to remove as much liquid as possible.  The easiest way to do this is to place it in a clean tea towel and squeeze out the liquid.

In a medium size bowl mix the yoghurt with the garlic and the cucumber.

Slowly add the vinegar and olive oil and mix well.

Refrigerate until needed.
