Recipe: Crab Stick Salad

Even a simple salad can be made to look interesting by taking a little extra time to dish it up attractively.

We love Crab Sticks and buy them here in packs of 10 sticks.  I find they freeze well and 5 sticks, when cut into small chunks, is enough for 2 people.

Ingredients -

lettuce, roughly sliced
cucumber, cut into slices
spring onion, cut into rings
red pepper, de-seeded and sliced
sweetcorn
tomatoes
carrot, grated
crab sticks, cut into small chunks
hard boiled egg
salt and pepper
lemon juice
olive oil
dried chervil (optional)


Method -

Layer the salad items attractively on a plate.

Sprinkle over the crab sticks and cut the hard boiled egg into quarters.

Drizzle over the lemon juice, olive oil and season with salt and pepper.  Sprinkle with a tsp chervil.
