Ingredients - serves 2
1 boneless chicken breast
lettuce, roughly chopped
spring onion, sliced
red pepper, de-seeded and sliced
carrot, peeled and grated
Honey, Mustard Dressing, see recipe
Place the chicken portion in a plastic bag and beat with a meat mallet or rolling pin until chicken is 2cm thick.
Sprinkle the portion with lemon and lime juice and chicken seasoning and rub in. Turn the portion over and repeat.
Put the chicken in the fridge to marinate for at least 1 hour.
Grill the chicken portion for approximately 6 minutes on each side until the chicken juices run clear.
Leave to rest for a minute and then slice up.
Layer the salad items on a plate and top with the sliced chicken.
Drizzle over the Honey, Mustard dressing and serve.
