One of the things I love about living in Turkey, is visiting friends and coming home loaded down with fresh fruit. Apricots are in season at the moment, so the challenge is to find things to do with them.
Ingredients - serves 2
4 apricots, halved and stones removed
juice of 1 orange
2 cups milk
1 tbsp honey
If you want you can peel the apricots, but if they are really fresh the skins should pulp up nicely.
Put all the ingredients in a blender and blend until smooth.
Bake some Quick and Flaky Apricot Pockets (see recipe) and you have a lovely summery breakfast.
