Recipe: Potato and Courgette Bake

Ingredients - serves 2

2 medium potatoes, peeled and thinly sliced
1 medium courgette, thinly sliced
1 packet cheese sauce
bacon bits, optional
grated nutmeg
handful of breadcrumbs
handful of Parmesan cheese
1 tsp oregano

Method -

Butter one dish or two individual dishes place a layer of potato, followed by a layer of courgette, and a sprinkling of bacon bits, if being used.  Spoon on some cheese sauce and grate over some nutmeg.

When layering the potatoes and courgettes, slightly over lap each slice.  Season each layer with a little salt and pepper.

Continue with this layering until the dish is almost full.

Mix together the breadcrumbs, Parmesan cheese and oregano and sprinkle over the top of the bake or bakes.

Cook in a preheated oven at 200c until the sauce is bubbling and brown on top.
