Recipe: Mini Pizza Snacks

Ingredients - serves 2

6 slices of day old baguette
tomato relish or Turkish Kavatlı Sos
handful of mushrooms, thinly sliced
2 roasted red peppers, sliced into ribbons
grated cheese

Method -

Grill the slices of baguette on both sides.  Normally I would brush the bread with oil before grilling, but on this occasion I don't as the toppings are quite oily.

Spread each slice with some of the tomato relish.

Top with the slices of mushroom and ribbons of roasted red pepper.

Sprinkle each slice with a generous helping of grated cheese.

Return to the grill until the cheese has melted and is bubbling.
