Recipe: Baked Cheesecake

Ingredients - serves 6

2 cups of biscuit crumbs
half cup butter, melted
500g süzme yoghurt, or a thick yoghurt
1 cup sugar (this quantity may need to be adjusted depending on the tartness of the yoghurt)
1 tbsp flour
4 sachets of vanilla
3 large eggs
200g carton cream, whipped

Method -

Mix together the biscuit crumbs and melted butter.

Press firmly into the tin.  If using a loose bottom tin you might want to line it with foil or greaseproof paper to stop any leaks.

In a large bowl add the yoghurt, sugar, flour and vanilla, mix together well.

Whisk in 1 egg at a time.

Fold in the whipped cream.

Pour onto the biscuit base and bake at 170c for 40 to 50 mins.  It can help to put a bowl of water in the bottom of the oven to keep it moist.  The top should have a light brown colour when cooked.

Let it cool and then keep in the fridge overnight.

Can be served as it is or with a fruit sauce.
