Recipe: Spanish Omlette

Ingredients - serves 2

225g potatoes, peeled and cubed
1/2 red onion, chopped
1 tbsps olive oil
1 small crushed clove of garlic
1/2 red pepper, chopped
50g frozen peas
4 eggs
25g grated cheese
1 tbps parsley
salt and pepper

Method -

Boil the potatoes for 5 mins, then drain.

In a pan fry the chopped onion in 1 tbsp olive oil for 3 mins.

Add the crushed garlic, chopped pepper and frozen peas.

Fry for 3 mins and transfer to a plate.

Heat 1 tbsp oil oil in the pan and fry the potatoes for 8 mins.

Beat the eggs with 25g grated cheese and season with salt and pepper.

Return the vegetables to the pan with 1 tbsp chopped parsley.

Reduce the heat and pour in the eggs.

Cook until the bottom of the omlette is browned, then grill until the top is set.
