Recipe: Broccoli Slaw

I hate throwing food away, so when I saw a coleslaw being made on a cookery program using the broccoli stalks that you would normally throw away during preparation I thought this was such a good idea.  It gives a different twist to the slaw and is good for you.  The stalks can be kept in a plastic bag in the fridge for several days before being used.


Ingredients - serves 4

handful of broccoli stalks, trimmed
1 small onion, peeled and quartered
1 medium carrot, peeled
handful of fresh mint, finely chopped
plain yoghurt, amount depends on personal taste
salt and pepper to season

Method -

Roughly chop the broccoli stalks and then put in a food processor with the onion quarters.  Process until chopped finely.

The carrot I like to shave off thin pieces using a potato peeler, this gives a different texture and size to the slaw.

Add the broccoli and onion mix, carrot and chopped mint in to a large bowl and mix together.

Season with salt and pepper.

Add the plain yoghurt.  I haven't given an amount here as it very much depends on whether you like a sloppy slaw or a dry one, so add as much as you like.
