Recipe: Aubergine Conserve (Közlenmiş Patlıcan Konservesi)

Ingredients - 

3 large aubergines

1/4 cup olive oil
juice of 1/2 lemon
1/2 tsp salt
1/2 tsp sugar

Method -

Grill the whole aubergines over a barbecue or under a grill until the outsides are burnt and the inside is soft.  The more you blacken the skins the smokier the final flavour.

When cooked hold each aubergine by the stem under running water for 2-3 seconds.

Then peel the skin off with a knife.

Put the skinned aubergines in a bowl, cut off the stems and chop up into bite size pieces.

Add the olive oil, lemon juice, salt and sugar and mix gently.

Store in a jar in the fridge until needed.
