Types of Mushrooms

Oyster Mushrooms ( Çığ Mantar literal translation Avalanche Mushroom)
These mushrooms have hardly any stalks. The caps are shaped like oysters and usually grow in layers on dead deciduous trees. They are sweet tasting, some people say they taste and smell like oysters.

(See recipe for Grilled Oyster Mushrooms).

Saffron Milk Cap or Red Pine Mushrooms (Cıntar Mantarı)
There have been a lot of these mushrooms on the market at the moment. When you first see the mushrooms they do not always appear appetising as if not handled gently the mushrooms stain a deep green.  But I have been told that they are very tasty lightly fried, cap down in olive oil with garlic and then served with more olive oil drizzled over and freshly chopped parsley.
