Recipe: Grilled Oyster Mushrooms

Ingredients - (serves 2)

1/2 cup olive oil
6 cloves of garlic, peeled and chopped
1 tbsp dried basil
6 sun dried tomatoes, chopped
bunch of oyster mushrooms
salt and pepper

Method -
In a small saucepan, add the olive oil and heat over a medium heat.
Reduce the heat to low and add the garlic, basil and sun dried tomatoes.
Simmer very gently for 20 minutes, check it regularly to make sure the vegetables do not burn.
Sieve into a jar, and discard the vegetables. There will be more infused oil than you need but it will keep in a sealed jar until needed again.
Carefully cut the mushrooms so that they remain whole but are individual, so they will sit on the grill as flat as possible.
Brush the mushrooms with the infused oil.
Season them with salt and pepper.
Grill on a high heat for 4 - 5 mins per side or in a frying pan or griddle. Turn only once.
Serve on their own with crusty bread or as an accompaniment.

You may not want to eat the stalks as they can be woody.
