Recipe: Bits and Pieces Potato Pie

This dish came about after having some spicy sausage and potatoes left and wondering what to do with them.

Ingredients - serves 2

4 medium potatoes, peeled and cut into quarters
1/2 cup diced onion
2 roasted red peppers, chopped
1/2 cup diced or grated cheese
1/4 cup spicy cooked sausage, diced
knob of butter or margarine
1/2 tbsp milk
salt and pepper
grated parmesan (optional) 
finely chopped parsley

Method -

Boil the potatoes in salted water until soft. Drain and mash using the milk and butter or margarine to achieve a soft mash.

Mix in the onion, roasted red peppers, cheese and sausage.

Season with salt and pepper.

Transfer to an ovenproof shallow dish sprinkle the top with parmesan or more of the grated cheese and parsley and bake for around 20 mins until golden on top.
