Recipe: Vegetable Bake with Breadcrumb and Parmesan Topping




A simple dish when you have some vegetables to use and casserole or such like packet mix.

Ingredients - serves 2 to 3

2 leeks, thinly sliced
1 courgette, thinly sliced
1 parsnip, peeled and thinly sliced
2 carrots, peeled and thinly sliced
1 packet sauce mix, such as bolognese or any other casserole mix
2 cups bread crumbs
1 cup grated parmesan cheese
2 tbsps chopped parsley

Method -

Put all the cut up vegetables into an ovenproof dish.

Make up your packet casserole mix with 300ml water only.

Pour the made up packet mix over the vegetables making sure that the liquid does not quite cover the vegetables.

Put in the oven at 200c for 1 hour.

After 1 hour, mix together the breadcrumbs, parmesan and parsley and sprinkle over the vegetables.

Return to the oven for around a further 15mins or until the breadcrumbs are golden brown.
