Ingredients - serves 2
1 cup tagliatelle, cooked
1/2 red pepper, cut into matchstick size pieces
1/2 onion, thinly sliced
1/2 courgette, cut into matchstick size pieces
1/2 tin (1100g) sweetcorn
1/2 tin (200g) tomatoes
2 cloves garlic, roughly chopped
5 mushrooms, thinly sliced
1 tbsp olive oil
2 tbsps black bean sauce
Heat the olive oil in a large frying pan and then add all the vegetables and stir fry for a few minutes until they start to turn soft. This will not take long if you have cut the vegetables into thin pieces.
Once the vegetables start to soften add the cooked tagliatelle and the black bean sauce.
Mix all the ingredients well and serve.
