The onions cook for about an hour and reduce down quite a bit so you need to use double the amount of onions that you would normally need.
1 tsp of olive oil per onion
1 tsp of butter per onion
1 tsp of honey per onion
Cut the onions in half and then with the cut side down slice the onions thinly.
In a heavy bottomed frying pan add the olive oil and butter, 1 tsp of each per onion being used. Heat the oil and butter mixture until it starts to glisten.
Add the onions and stir well to coat them all over. The spread the onions out over the bottom of the frying pan so they all in contact with the bottom of the pan.
Over a low heat allow the onions to slowly fry, stirring them occasionally so they don't stick and burn.
After about 10 mins sprinkle over some salt and stir in a tsp of honey per onion.
Allow the onions to cook for a further 30 mins to 1 hour, stirring occasionally, don't worry if you start to get brown bits on the bottom of the pan because this adds flavour.
If the onions start to dry out too much add a little more oil.
Once the onions have become soft and brown they are ready.
