Open Sandwich: Tuna Salad



Ingredients - serves 2

2 slices of bread
1 tin (185g) tuna, drained
2 tbsps sweetcorn
1/2 small onion, chopped small
1/2 red pepper, chopped small
1/3 cucumber, chopped small
1/2 carrot, chopped small
1 tbsp tomato ketchup
2 tbsps mayonnaise
splash of vinegar
salt and pepper
finely chopped parsley for garnish

Method -

Put all of the tuna and vegetables into a bowl and mix well.

Add the tomato sauce, mayonnaise, season with the vinegar, salt and pepper.

Pile onto the slices of bread and garnish with the chopped parsley.
