Open Sandwich: Smokey Chicken

The smoky taste in this sandwich is achieved using a turkish chutney made of whole aubergines which have been cooked over a gas flame or traditionally over a wood fire until they are bunt on the outside and soft inside. *See the recipe for Aubergine Conserve (Közlenmiş Patlıcan Konservesi).

Ingredients - serves 1

1 slice of bread
1 cup cooked chicken cut into bite size chunks
1/2 cup aubergine chutney
1 tbsp mayonnaise
salt and pepper to taste
chilli flakes or cayenne pepper to garnish

Method -

In a bowl mix together the chicken, aubergine chutney, mayonnaise. Season with salt and pepper.

Pile onto the slice of bread and sprinkle over a pinch of chilli flakes or cayenne pepper.
