Recipe: Lemon Chicken

This method of cooking chicken portions can be the basis for many dishes.


Ingredients - serves 2
2 small chicken portions or 1 large chicken portion
1 small onion, thinly sliced into rings
1/2 lemon, thinly sliced
2 sprigs rosemary or dried rosemary
salt and pepper
olive oil

Method - 
Cut out a square of tin foil large enough to wrap the chicken portion into a parcel.

Put chicken portion into the center of the foil.

Season portion with salt and pepper.

Then layer with onion rings, lemon slices and a sprig of rosemary.

Add a sprig of rosemary or dried rosemary.

Fold over foil to create a parcel.

Cook in preheated oven at 200c for 25 to 30 mins or until cooked.

When cooked discard the lemon slices and rosemary.
