Recipe: Turnovers

This is a really simple idea for sweet or savory turnovers. I use frozen squares of pastry as you can take out as many as you need and by the time you have gathered together the ingredients needed the pastry is defrosted.

Cheese and Onion
Put the oven on to 200c.
On a baking tray lay out your required number of squares of pastry, I find one per person is enough for a light snack.
Brush the squares of pasty with milk.
Chop finely enough onion to have a small layer in the center of the square of pastry.
Grate enough cheese to add to the layer of onion to create a heap in the center of the pastry.
Fold the squares over corner to corner to create a triangle.
Carefully pick up the triangle and pinch around the open edges to seal them tightly.
Return to the baking tray and brush with milk.
Put the turnovers in the oven for around 15 to 20mins until golden brown.
Leave to cool for a few minutes before serving as the cheese will be very hot.




Sultana and Cinnamon
Put the oven on to 200c.
On a baking tray lay out your required number of squares of pastry, I find one per person is enough for a light snack.
Brush the squares of pasty with milk.
Mix together 1 part brown sugar to 2 parts cinnamon powder. I always have a small jar with a quantity of this pre-mixed for ease.
Sprinkle a generous amount of this brown sugar, cinnamon mix over each square. About 1 heaped teaspoon per square.
In the center of each square pile sultanas.
Fold the squares over corner to corner to create a triangle.
Carefully pick up the triangle and pinch around the open edges to seal them tightly.
Return to the baking tray and brush with milk.
Put the turnovers in the oven for around 15 to 20mins until golden brown.
Leave to cool for a few minutes before serving as the sultanas will be very hot.

If you find folding the turnovers into triangles difficult then fold over edge to edge to create an oblong and again pinch round the open edges to seal them tightly.





Bacon, Cheese and Onion
Put the oven on to 200c.
On a baking tray lay out your required number of squares of pastry, I find one per person is enough for a light snack.
Brush the squares of pasty with milk.
Fry some bacon until and chopped onion together, just enough to fill however many turnovers you require.
Break up the bacon and divide the bacon and onion between the pastry squares.
Sprinkle with grated cheese.
Fold the squares over corner to corner to create a triangle.
Carefully pick up the triangle and pinch around the open edges to seal them tightly.
Return to the baking tray and brush with milk.
Put the turnovers in the oven for around 15 to 20mins until golden brown.
Leave to cool for a few minutes before serving as the filling will be very hot.
