Recipe: Sultana and Cinnamon Cake


This is a simple cake to make and is on the small size making it ideal for a small family.

Ingredients - makes 1 x 22cm cake 

113g butter
113g sugar
2 eggs
113g flour
2 tsps baking powder
2 tsps cinnamon
65g sultanas

Method - 

In a large bowl or food processor, beat the butter and sugar until smooth.

Then add the eggs, one at a time, until smooth.

Then fold in the flour, baking powder and cinnamon. If using a food processor, use the pulse setting to combine the dried ingredients.

Then whether mixing by hand or food processor, fold in the sultanas by hand.

Turn into a 22cm tin and bake at 200c for around 20 to 25mins.

Turn out onto a cooling rack and leave to cool.
