Good for using leftovers chicken and rice with a few fresh ingredients. As long as your total ingredients equals at least 5 cups you will have sufficient for 2 good portions for a main meal.
Ingredients - serves 2
2 tbsps garlic oil
1 spring onion or 1/2 small onion, chopped
1 heaped cup of cooked rice
2 cups of cooked chicken, roughly chopped (1 and 1/2 cups if using prawns)
1 cup sweetcorn
1/2 cup prawns (optional)
1 cup beansprouts
1 large or 2 small eggs, beaten
2 tbsps soy sauce
Fry the onion in the garlic oil.
Once the onion has softened add all of the other ingredients except the egg.
Stir well and fry until heated through.
Then working fast add the beaten egg and stir quickly to cover everything in egg before the eggs starts to cook.
