Recipe: Roasted Vegetables with Chicken Köfte

Ingredients - serves 2

2 potatoes, cut into bite sized chunks
2 carrotts, cut into thick slices
1 red pepper, cut into bite sized chunks
1 courgette, cut into thick slices
2 shallots
1 large tomato, peeled and cut into chunks
12 chicken küfte
olive oil
salt and pepper

Method - 

Put all of the vegetables, except the tomatoes, into an oven proof dish large enough that they are in one layer.

Season well with salt and pepper and drizzle with olive oil. Mix so that all vegetables are coated.

Put in an oven at 200°c for around 30 mins until vegetables start to brown.

After 30 mins mix in the tomatoes and küfte and cook for a further 15 mins.

If you want a twist to the above then adding aubergine, chili flakes and pouring over balsamic vinegar at the end of the cooking time will give a richer, spicier taste.
