Recipe: Fried Egg with a Twist

This is a quick way of jazzing up a fried egg for a lunchtime snack.



Ingredients - serves 2
1tbsp butter
handful of mushrooms, sliced
handful of salami sausage, cut into thin strips
5 eggs
handful of grated cheese
salt and pepper
parsley, chopped for garnish


Method - 
Fry the mushrooms and salami sausage in the butter until lightly browned.  The remove from pan and put to one side.
In the same pan put in the eggs, lightly breaking up the yokes once in the pan.  
Once the eggs start to cook, sprinkle the mushroom and salami sausage mix over the top. 
Season with salt and pepper and sprinkle over the grated cheese.
Cook until the egg is fried.
Turn out onto a plate and garnish with chopped parsley.
