Recipe: Chicken Stir-Fry with Hoysin Sauce





Ingredients - serves 2

1 chicken portion, sliced into strips
1 red pepper, sliced
1 onion, sliced
1 tomato, chopped
1 clove garlic, chopped
handful of mushrooms, sliced
6 baby sweetcorn, quartered lenghtways
2 dessertspoons of hoysin sauce
1 tbsp olive oil
salt and pepper
1 portion of noodles, cooked

Method - 

In a pan of salted water cook the noodles.

In a pan fry the chicken strips in olive oil until they start to brown.

Then add the red pepper, onions and garlic and cook until vegetables start to soften.

Add mushrooms, tomato and baby corn and cook for a further minute or two.

Then add the hoysin sauce, salt and pepper and cook again for another minute or two.

Just before serving stir in the cooked noodles.
