Recipe: Chicken Saute

Ingredients - serves 2

1 chicken breast, cut into chunks
1 red pepper, cut into chunks
1 green pepper, cut into chunks
1 onion, cut into slices
1 clove garlic, chopped
1 large tomato, skinned and cut into chunks
3 mushrooms, sliced
3/4 cup chicken stock
1 tbsp olive oil
1 tsp red pepper flakes
salt and pepper
splash soya sauce

Method -

In a pan fry the chicken chunks in olive oil until chicken starts to brown.

Add peppers, onions and garlic fry until vegetables start to soften.

Add mushrooms, tomatos, stock, red pepper flakes, soya sauce, salt and pepper.

Simmer until liquid reduces and sauce thickens.

Serve with boiled rice.
