Ingredients - serves 3 to 4
1 medium onion, finely chopped
1tsp dry mustard
175g grated cheese
3 tbsps finely chopped parsley
Salt and pepper
Cook potatoes in boiling salted water until tender. When cooked drain and put into a large bowl.
Mash well with milk.
Then add chopped onion, dry mustard, 100g of the grated cheese, and parsley and mix well.
Season with salt and pepper.
Transfer to buttered 1ltr heatproof dish.
Sprinkle the remaining cheese over the top.
Re-heat towards the top of the oven until the top lightly browns.
