Recipe: Cauliflower Cheese

Ingredients - serves 2 to 3 

1 medium cauliflower
1 packet white sauce
bacon flakes
salt and pepper

Method - 

Separate the florets of cauliflower and boil in salted water until they just start to soften.

Drain and put in a shallow ovenproof dish.

Cook the white sauce as per the instructions on the packet. However, I reduce the amount of liquid by 150ml as the water from the cauliflower will thin the sauce.

Once the sauce has cooked remove from the heat and stir in the cheese. I have not given a quantity for the cheese here as I prefer to add the cheese and taste as I go as the type of cheese you use determines the cheese taste.

Season the cauliflower in the ovenproof dish with salt and pepper and sprinkle on the bacon flakes.

Then cover the cauliflower with the cheese sauce, sprinkle with more grated cheese and a little grated nutmeg.

Put in the oven at 200c for around 20 to 30 mins until the cheese starts to bubble and brown.

♦For a change, add a handful of sweetcorn or chopped carrots instead of, or as well as the bacon.
