Recipe: Barmbrak Cake (Tea Cake)

Ingredients - 

340g cold tea
198g brown sugar
340g dried fruit

250g plain flour
3tsp baking powder
1 egg
2 tsps cinnamon
2 tsps allspice

Method -

Soak the fruit in the cold tea over night.

Line a loaf tin with greaseproof paper.

In a large bowl mix together the sugar, egg and fruit tea mix.

Fold in the flour, cinnamon, allspice and baking powder.

Transfer into the prepared loaf tin and bake at 180c for about 1 hour. 

Insert a skewer into the cake to check that the it is cooked. 
If the skewer comes out of the cake clean then it is cooked.

Serve slices spread with butter.
