Recipe: Simple Tuna Pasta

Ingredients - serves 2 to 3

1 1/2 cups pasta (small spiral shapes work well)
1 chicken or vegetable stock cube
1tbsp olive oil
1/2 medium onion, chopped
1 small red pepper, chopped
110g - 1/2 tin sweetcorn, drained
200g - 1/2 tin tomatoes
160g - 1 tin tuna, drained

Salt and pepper
1tsp oregano

Method -

Cook pasta in a saucepan with the chicken or vegetable stock cube.

In another saucepan sauté the onion and red pepper in 1tbsp olive oil until soft. 

As they start to turn soft add the sweetcorn.

Then add the tomatoes, and about 1/2 a cup of the pasta water (to create a sauce). 

Add 1tsp oregano and season with salt and pepper. 
Leave to simmer for a few mins.

Drain the pasta, return to the saucepan and pour over the tuna sauce. 

Mix well.

Serve sprinkled with parmesan cheese.

To add a twist add a tbsp of capers with the sweetcorn.
Hard boil two eggs and shell.

When serving the pasta cut each egg in half and put on the top of each dish.
Then sprinkle over the parmesan cheese and parsley.
