Open Sandwich: Lemon Chicken





I use the lemon chicken from my recipes and bread made using my seven seeds with mediterranean flavours, but any bread or chicken will do.

Basically you just chop the chicken into bite sized pieces.

Season with salt and pepper and mix with mayonnaise to the consistency you prefer.

For an added twist I add a sprinkling of bacon pieces.

Then spread over slices of bread.
